The end of May bring about one of my favorite seasons...Strawberry season!  This is a cool refreshing vegan Strawberry treat.

At a glance
  • 2 13.5oz cans coconut milk, lite and regular
  • ¾ cup agave syrup
  • 1 teaspoon alcohol free vanilla
  • 1 pint fresh strawberries
  • 1/8 teaspoon guar gum, optional
  • dash of sea salt


Place all ingredients in a blender.  Start on a low speed until ingredients are well combined.   Continue to blend on a highest speed for 30 seconds to 1 minute.  Transfer mixture into an airtight container and chill in refrigerator for at least an hour or two.

Pour mixture into ice cream maker according to maker's instructions.  If you don't have an ice cream maker yet, transfer bowl to freezer.  When mixture is almost frozen in freezer or maker, add in fresh chopped strawberries.

Additional Tips

This ice cream will be a little icy after freezing because of the water content of the fresh strawberries.
